Keo The island of Cyprus has a tradition of wine making stretching back over thousands of years. The country’s leading wine maker is the firm of Keo, based in Limassol. They are probably most famous for Commandaria St. John, a rich and intense pudding wine made from a rare ancient indigenous grape variety, Xynisteri. The grapes grow in volcanic soils producing a low yield. After harvesting the grapes are exposed directly to the sun, on rooftops, to increase their sugar content. The attractive and clean white wines – Aphrodite and Thisbe - are also both made from the ancient Xynisteri grape variety while the robust red Othello is made from a blend of two grape varieties, Mavro and Ofthalmo from vineyards at Vouni Panayias and Madhari Pitsillias.
